Sweet Banana Oatmeal Pancakes with Blueberry Topping
Whip up these pancakes in a blender or food processor for a quick breakfast that is both tasty and healthy. Oats provide fiber and protein to keep your family satisfied until lunch, while a ripe banana makes these pancakes extra sweet!
Ingredients
1 cup oats (quick or old-fashioned)
1 teaspoon baking powder
¼ teaspoon salt
1 cup milk of your choice (low-fat milk or unsweetened almond or soy milk)
1 medium very ripe banana, peeled and cut
Canola oil (or other) cooking spray
½ cup frozen blueberries
2 tablespoons maple syrup
Directions
Pancakes
- In a blender or food processor, blend oats, baking powder and salt until oats are finely chopped into a coarse flour consistency. Add milk and banana and blend until smooth.
- Heat a nonstick pan on medium and spray with cooking spray.
- Cook pancakes until golden brown on each side and set aside.
Blueberry topping
- In a small microwave-safe dish, defrost frozen blueberries with 2 to 3 tablespoons of water.
- Add maple syrup, mash the blueberries, and mix well.
- Serve over pancakes.
Tip: For a quick weekday breakfast, store extra pancakes in the fridge for up to three days. Reheat in the oven or microwave.
