Tasty Veggie and Bean Tacos

Serving size: 2 tacos
Try incorporating more vegetables into your family’s dinner by making a familiar dish with a twist. Tacos are a great way for kids to try new foods, like beans which add protein and fiber to satisfy. Use your own spices instead of taco seasoning mix to control the sodium.
Ingredients
Tacos
1 can vegetarian refried beans
1 medium red onion, diced
3 bell peppers, diced
2 medium zucchini, diced
1 teaspoon chili powder
1 teaspoon cumin
2 tablespoons olive or canola oil
Salt and pepper to taste
1 fresh lime, juiced
8 small corn tortillas
Tip: Check the nutrition label on your corn tortillas to make sure there’s no added oil or lard in the ingredients.
Toppings (optional)
Salsa
1 avocado, sliced
Fresh cilantro
1 radish, sliced
1 fresh lime, cut into wedges
Directions
- Preheat oven to 400 degrees Fahrenheit.
- In a small bowl, combine oil, lime juice and spices. Toss with onions, peppers and zucchini to coat.
- Roast veggies on a baking sheet for 10 minutes, then remove and toss again. Return to oven and roast until softened, about 10 minutes.
- At the same time, wrap tortillas in foil and place in oven for the remaining time to warm.
- Warm the refried beans, either in a small pan on the stove or in the microwave covered for one to two minutes.
- Spread ¼ cup refried beans on each tortilla, then add roasted veggies.
- Serve with toppings of choice.
Tip: Get your kids involved with a taco bar and let them pick their own toppings
