Turkey Taco Salad
Makes 4 servings
Are you looking for a way to mix up your family’s weekly taco night? This salad is quick, easy and delicious! Add salsa directly to the cooked turkey in place of taco seasoning to cut sodium. Check the nutrition label on your salsa to make sure sodium content is 140 milligrams or less per serving.
Ingredients
12 ounces lean ground turkey
2 cups green pepper, chopped
1 cup salsa
¼ cup cilantro, chopped
4 cups romaine lettuce, chopped
2 cups of tomato, chopped
1 cup reduced-fat cheddar cheese, shredded
1 cup baked tortilla chips, crumbled
¼ cup green onions, chopped
Cooking spray
Directions
- Wash and chop your vegetables. Set aside.
- Spray a medium sauté pan with cooking spray. On medium-high, cook turkey and green pepper until turkey reaches 165 degrees on a meat thermometer. Drain.
- Reduce heat to low. Add salsa and cook for 10 minutes.
- Remove from heat and mix in cilantro.
- To make one serving, plate 1 cup lettuce and top with 1 cup turkey mixture. Sprinkle with ½ cup tomato, ¼ cup cheese, ¼ cup tortilla chips and 1 tablespoon onions.
- Repeat for additional servings.
