Veggie Pie in the Sky 

Makes 4 servings 

Serving size: ½ English muffin “pizza” 

Turn snack time into fun time with homemade mini pizzas. A combination of whole grains, dairy and vegetables gives your kids three food groups to satisfy their after-school cravings and keep them fulfilled until dinner.  

This version uses whole wheat English muffins as the “crust”, but you can use whole wheat mini bagels or small pita rounds instead. Top your pizzas with a variety of vegetables for a splash of color. Ideas include broccoli, spinach, red or orange bell pepper slices and yellow squash. This snack is a great way to finish any leftover vegetables in your fridge. 

Ingredients 

2 whole wheat English muffins  

4 tablespoon pizza or pasta sauce  

1/2 cup low-fat mozzarella cheese, shredded 

1/2 cup vegetables of choice, chopped  

1/4 teaspoon oregano  

1/4 teaspoon garlic powder  

Directions 

  1. Separate your English muffins into halves and toast them.
  2. Preheat your oven or toaster oven to 350 degrees Fahrenheit. 
  3. Line a baking sheet with aluminum foil and place muffins face-up. Top with 1 tablespoon sauce each and spread evenly. Add vegetables and sprinkle cheese on top, followed by spices.
  4. Bake muffins until cheese starts to melt, about 5 to 7 minutes.
